Healthy beef nachos
These nachos are a healthy dinner for two
2 BFree wraps
1 onion
1 small carrot, shredded
400g lean mince beef
200g red kidney beans
1/2 small can corn
1 can chopped tomatoes
1 tsp paprika
1 tsp oregano
1/2 tsp chilli powder
1/2 tsp garlic powder
80g reduced fat cheddar
50g fresh cherry tomatoes, chopped
Spring onions, chopped
Fresh coriander, chopped
Fresh chilli, chopped (optional)
Cut wraps into small tortilla shapes. Spray with Fry Light and toast in the oven for 10 minutes until golden and crispy.
Fry the onion and carrot in Fry Light and add the lean mince beef. Cook for 5 minutes or until brown then add the paprika, oregano, chili powder, garlic powder, red kidney beans, chopped tomatoes and cook for 10 minutes.
Transfer the meat mixture onto a baking tray, then top with corn and reduced fat cheddar. Broil under the grill until bubbly. Before serving, place the tortilla chips around the dish, top with chopped fresh cherry tomatoes, spring onions and fresh coriander. Serve immediately.
