Healthy carrot cakes

Because even on a diet, you need your treat!

2 Weetabix

2 eggs, separated

2 carrots, peeled and finely grated

4 tbsp sweetener

2 tsp cinnamon

1/8 tsp nutmeg

1/4 tsp ginger

15ml skimmed milk

For the icing

150g quark

2 tbsp sweetener

Whisk the egg whites until they form soft peaks. Heat the oven to 180°C.
Place the weetabix, sweetener and spices into a blender and pulse until you get a fine texture. 
Transfer the mixture into a mixing bowl and add the grated carrots, egg yolks and milk. Mix until well combined. Finally, fold in the egg whites. 
Transfer into 6 cupcakes cases and bake for 20 to 25 minutes. Let cool completely.
Meanwhile, mix the quark and sweetener to make the icing. Pipe on the cooled down cakes and serve.
