Honey, goat cheese and walnut mini-muffins

These savoury muffins are a lovely festive appetizer.

150g flour

2 tsp baking powder

6cl olive oil

100g yoghurt

3 eggs

150g goat cheese, crumbled

60g Boyne Valley Honey

100g grated white cheddar

50g chopped walnuts

A few sprigs of fresh rosemary

Salt and pepper

Preheat the oven to 175°C/350°F/Gas 4.
In a large mixing bowl, beat the eggs, oil, yoghurt, honey, salt and pepper. Fold in the goat cheese, cheddar, walnuts and rosemary leaves. Beat the flour and baking powder in the egg mixture and combine gently. 
Pour into a muffins tray and top with a walnut piece. Bake for 12 to 15 minutes, or until an inserted wooden skewer comes out clean. Let cool before serving.
