Light berry cheesecake
You won't believe this dessert is (almost) sin free!
450g light soft cheese
250g quark
20g sweetener
2 sachets gelatin
2 tsp vanilla extract
12 Aldi Harvest Morn Benefit 70 Cal Cereal Bars
100g strawberries
150g raspberries
150g blueberries
Break up the cereal bars and place in a microwave proof bowl. Microwave for 30 seconds until soft. Transfer into a lined round springform cake tin and press down to create an even surface. Refrigerate.
Prepare the gelatin according to package and let cool. Place the strawberries in a mixer and blend.
Place the soft cheese, quark, sweetener, strawberry sauce, gelatin and vanilla extract in a large mixing bowl and whisk until smooth.
Pour the cheesecake mixture onto the base, cover with cling film and refrigerate overnight.
Decorate with blueberries and raspberries and serve immediately.
