Vegan rice pudding
A healthy dessert the whole family will love
350g arborio rice
600ml unsweetened coconut milk
2 tbsp sweetener (to taste)
1 tsp vanilla extract
1 banana
100g blueberries
Place the rice, milk and vanilla extract to a saucepan. Cook on a low heat for around 20 to 25 minutes, stirring occasionally.
When the rice is tender and creamy, add the sweetener and ¾ of the fruits and stir.
Serve immediately, placing the remaining fruits on top to garnish.
