Chicken Korma

This recipe is so easy yet extremely tasty.
2 tbsp olive oil
2 onions, peeled and sliced
1 clove garlic
1/2 tsp ginger
1 tsp garam masala
1/2 tsp cumin
1/2 tsp tumeric
4 large chicken fillets
1 x 400g tinned tomatoes
1 x 400g tin coconut milk
Coriander to garnish
Toasted almonds, to serve
Rice to serve
Heat the oil in a frying pan on a medium temperature. Fry the onion, garlic and ginger in the oil until fragrant and soft.
Add in all spices and allow to combine (30 seconds or so)
Add chicken and a tablespoon of water, cook chicken through.
Add tinned tomatoes and coconut milk and simmer for 20-25 minutes.
Garnish with coriander and almonds.
Serve with rice.
