Chickpea curry

This vegetarian chickpea curry makes a healthy dinner and is full of flavour.
1 onion, chopped
2 garlic cloves, chopped
4 large tomatoes
½ tbsp oil
2 tsp curry powder
1 tsp ground cumin
1 tsp turmeric
1 tsp red pepper flakes
10 tbsp coconut cream
1 tsp ginger
50g spinach leaves
400g can chickpeas, drained
Combine your onion, garlic and tomatoes together until they are pureed. If you want it smooth you can use a hand blender or simply chop the vegetables finely and mix together.
Pour your oil into a saucepan and heat on a medium temperature.
Add the cumin, curry powder, turmeric and onion mix. Leave to cook for 3 minutes before adding in your pepper flakes, coconut cream, ginger and spinach.
Cook for another 3 minutes.
Pour in the chickpeas and mix together.
Serve hot.
