 Pomegranate salad with couscous and feta
The promegranate is a secret superfood and is packed full of antioxidants and vitamins.

300g couscous

1 tsp olive oil

½ head cauliflower, cut

Handful green grape, halved

100g feta cheese, cubed

200g pomegranates seeds

Flat leaf parsley to garnish

1 tsp lemon juice

Cook the couscous according to packet instructions.

In a small pan heat the oil and gently cook your cauliflower. Don’t allow it to brown. Remove and leave to brown.

Cut your feta into cubes and slice your grapes length ways.

Spoon your couscous onto a clean plate, top with the feta, cauliflower, pomegranate seeds and grapes.

Garnish with your parsley and sprinkle the lemon juice on top.
