This delicious pesto sauce can be whipped up in less than 10 minutes. It is great on pizzas or served over cooked potatoes.
4 tbsp dry basil leaves
125ml olive oil
2 cloves garlic, mashed
80g parmesan cheese, grated
Handful toasted pine nuts
Combine the basil, oil and garlic together in a blender. Gently pulse.
Add the cheese and nuts and process for another minute.
Serve over pasta or crispy potatoes.
This keeps for a week in the fridge.
