Guacamole

Avocados, native to Mexico, are widely loved for their use in guacamole. This is an easy to prepare dip which kids love - just don't forget to reduce the chillies if they are eating too.
4 ripe avocados
1 red Spanish onion - finely chopped
2 green jalapeno peppers
1 tsp ground fresh garlic
Good handful of fresh coriander - finely chopped
Peel the 4 ripe avacados and slice them them into small pieces.
Don't know how to peel an avocado? Place avocado on cutting board. Insert knife into stem end; slice into halves lengthwise to the stone, turning avocado while slicing. Remove knife blade; twist both halves to pull apart. Press knife blade into stone; twist knife to pull stone free from the avocado. Put a spoon between the avacado and skin and spoon out the flesh.
Place the avocado, finely chopped Spanish onion, garlic and green jalapeno peppers into a bowl and mix well. Adjust the jalapeno peppers to increase or decrease the heat from the guacamole.
Mix well, bringing all the flavours together.
Add salt to taste - avocados absorb salt well so taste the guacamole as you are preparing it.
Take the finely chopped fresh coriander and mix with the guacamole just before serving.
