Apple strudel

Apple strudel is a delicious and easy treat and kids are sure to love this recipe as there are no raisins and only a sprinkling of cinnamon.
5 cooking apples
1 tbsp lemon juice
1 tbsp spoon plain flour
4 sheets filo pastry
50g butter
140g caster sugar
1 tsp cinnamon
Icing sugar to garnish
Mint leaves to garnish
Cream to serve
Preheat the oven to 180°C / 350°F / Gas Mark 4. Line a baking tray with parchment paper.
Cut the apples into small cubes and place in a bowl of lemon water to keep fresh.
Dust your work surface with a little flour and lay out your pastry sheets.
Melt your butter in a saucepan and brush over the pastry sheets.
Combine your apple slices with the caster sugar and cinnamon in a bowl and spoon onto one side of the pastry.
Roll the other side of the pastry over like a swiss roll. Do this until all the apple is used up.
Brush the opening with a little butter and place on your prepared baking tray.
Place in the oven for 20 minutes and allow to cool before cutting into slices.
Garnish with a little icing sugar and mint leaves and serve with the cream.
