Peach clafoutis

This makes for a delicious grown-up dessert. The fruit and amaretto works beautifully together. If you are not a fan of peaches, cherries, nectarines or plums are also an option
Vegetable oil or oil spray
3-4 just-ripe medium peaches, halved and stoned
4 eggs, plus 3 egg yolks
Seeds of 1 vanilla pod or 2 tsp vanilla extract
100g (3½oz) caster sugar
40g (1½oz) plain flour
Pinch of salt
150ml (5fl oz) double cream
140g (5oz) soured cream or full-fat crème fraîche
2 tbsp amaretto
Icing sugar, for dusting
Preheat the oven to 180ºC/350ºF/Gas Mark 4. Oil the dish in which you will be serving the pie
Place the peaches cut-side down into the dish. Whish the eggs, yolks, sugar and vanilla in a bowl until the mixture turns frothy. Then add the flour and salt. Gradually add the double cream and sour cream as well as the amaretto. Whisk the mixture while adding each ingredient.
Continue whisking until everything is well combined and pour the mixture over the fruit. Place the dish into the oven and bake for about 30-35 minutes. Once removed from the oven, dust with icing sugar. Serve while hot with vanilla ice cream.
