This is a tasty, easy dessert to make - it's different to crumble and great way to use up fruit.
500g blackberries (hulled and cleaned)
500g eating apples (cored, peeled and sliced in thick slices)
Rind of 1 Lemon
15g (1 tbsp) caster sugar
Cobbler Topping:
225g self raising flour
50g butter at room temperature
Pinch of mixed spice
30g (2 tbsp) caster sugar
150ml milk
Preheat the oven to 200°C/400°F/Gas 6 and lightly grease an ovenproof dish.
Put the apples, blackberries, sugar and lemon rind into a large saucepan over a low heat. Simmer for about 12-15 minutes, stirring often until the fruit is tender.
To make the topping:
Sieve the flour and mixed spice into a bowl.
Using your fingertips, rub in the butter until mixture resembles fine breadcrumbs.
Add in the sugar and stir well.
Add in milk and mix to a soft dough - you may not need it all.
Empty onto a floured surface and roll out. You are looking for a 1cm thickness approximately.
Cut out 12 rounds using a 5cm scone cutter.
Pour the fruit mixture into the greased ovenproof dish. Place the scones on top, slightly over lapping around the outside of the dish.
Brush the tops with a milk.
Bake for 15 to 18 minutes until scones have nicely golden brown and well risen.
Serve immediately with cream or vanilla icecream.
