Apricot stilton pots

These are very rich and full of seasonal indulgent flavours.
300g Stilton (vegetarian if possible) but not essential
100g softened butter
40g chopped walnuts
25g dried apricots, chopped
Crumble the stilton into a small bowl.
Beat the softened butter until creamy, then stir into the stilton.
Pack into 6 150ml ramekins and smooth the tops.
Mix the walnuts and apricots and press on top of the cheese.
Wrap in cling film and chill for up to a week or freeze for up to 2 months.
