Asian chicken salad
This recipe for Asian chicken salad is super quick and easy to make-it's perfect for a light meal or for lunchboxes.

1 boneless, skinless chicken breast

1 tbsp fish sauce

Zest and juice ½ lime

1 tsp caster sugar

100g bag mixed salad leaves

Large handful coriander, roughly chopped

¼ red onion, thinly sliced

½ chilli, deseeded and thinly sliced

¼ cucumber, halved lengthways, sliced

In a small saucepan, pour water over the chicken breast and bring to the boil, cook for 10 minutes. Take out of the pan and using a knife tear into shreds. Remove from the pan and tear into shreds. Stir together the fish sauce, lime zest, juice and sugar until the sugar dissolves.

Place the leaves and coriander in a container, then top with the chicken, onion, cucumber and chilli if using. Place the dressing in a different container and sprinkle over the salad when ready to eat.
