Asian pork noodles

A quick, low in fat recipe made with Asian flavours and great for using up leftover mince.
200g thin rice noodles
400g lean minced pork
1 bunch spring onions, sliced into chunks
2 carrots, cut into matchsticks
5 tbsp soy sauce
1½ tbsp caster sugar
3 tbsp rice vinegar or wine vinegar
Juice 1 lime
200g frozen prawns, thawed
Handful mint and coriander leaves, roughly chopped
Put the kettle on then pour the boiling water over the noodles to cover them.
Wrap cling film over to seal and soak for 10 minutes.
Meanwhile, heat a large wok or frying pan and crumble in the mince.
Add some salt and pepper and fry, breaking it up with a wooden spoon for 7-10 minutes until browned.
Toss in the spring onions and carrots and cook for 2 minutes more.
Mix the soy sauce, sugar, vinegar and lime juice.
Add the prawns,drain the noodles, add to the pan/wok and heat through.
Pour in the dressing, top with the herbs and serve hot.
