Asian style fritters

These Asian style fritters are a great way to get your kids to eat their veggies.
170g rice noodles
2 large potatoes
1 cube powdered chicken stock
2 tbsp olive oil
½ carrot, grated
60g peas
1 red pepper, finely diced
½ small onion, diced
2 tbsp rosemary
3 eggs
120ml milk
35g self raising flour
On a medium heat, gently cook the noodles in a pot of water and add in your powdered stock. Drain and set aside.
In another pot, cook your potatoes until they are tender. Spoon in a little butter and mash them together.
Combine the noodles with the mash and add in the carrot, peas, pepper, onion, eggs, milk, rosemary and flour. Use a fork to combine the ingredients together.
Spoon the mixture onto a flat surface and make 12 rounds.
Heat the rest of the oil in the frying pan on a high heat. Lower the heat before gently frying your fritters for 2 minutes on each side. Drain off the oil before serving.
