Asparagus and bacon puffs

Asparagus and bacon puffs
These asparagus puffs are simple and tasty. They are quick to make so you can have them served up in no time after very little work.

1 tsp olive oil

4 slices of rashers

1 tbsp all-purpose flour, for dusting

375g puff pastry, homemade or frozen and allowed to thaw

110g Cheddar cheese, grated

20/ 25 asparagus spears, trimmed

1 egg

Preheat the oven to 200°C / 400°F / Gas mark 6. Line a baking tray with parchment paper.

Heat the oil on a frying pan over a medium heat and cook the bacon slices until just cooked. Remove and allow to cool.

Dust your work surface with flour and roll out your pasty sheets. Divide into four sections.

Sprinkle the cheese over each pastry slice.

Wrap a slice of bacon around four asparagus stems. Lay on top of the cheese.

Fold two sides of the pasty over the asparagus and coat each with a little egg.

Place in the oven for 20 minutes or until the pastry is puffed.  

Serve hot
