Green vegetable curry
If you enjoy a curry now and then but don't want to break your healthy eating plan then this Green vegetable curry is the perfect solution. This recipe only has 311 calories so you can still enjoy that Friday night curry without spoiling your diet. 

1 onion
1 green pepper
2 courgettes
1 aubergine
60 g thin green beans
spray oil
1 tbsp green Thai curry paste
100 ml canned reduced-fat coconut milk
100 ml vegetable stock
grated zest and juice of 1 lime
salt and ground black pepper
2 tbsp chopped coriander
200 g boiled Thai fragrant rice (cooked weight)

Prepare all the vegetables. Cut the onion in half and then slice very thinly. Remove the seeds from the green pepper and slice very thinly. Cut the courgettes and aubergine into cubes, and trim the green beans.

Spray a large pan with oil and place over a medium heat. Add the onion, green pepper, courgettes and aubergine and cook for 5 minutes, until softened.

Stir in the green Thai curry paste and then cook gently for 1 minute.

Add the thin green beans, coconut milk and stock. Simmer gently for 10 minutes, then stir in the lime zest and juice. Season to taste.

Serve the curry, sprinkled with coriander, with the boiled Thai fragrant rice.
