Asparagus and ham omelette

Omelettes are a particularly easy dish to serve up. They are pretty versatile and you can serve them for breakfast, lunch or dinner depending on what you put in it or serve with it.
1 tsp butter
8 asparagus spears, 6 halved and 2 finely chopped
5 large eggs
1 tsp fresh parsley, chopped
3 slices pre-packaged ham, cut into cubes
Melt the butter in a large frying pan on a medium heat.
Add all of the asparagus and cook for about 5 minutes until crispy.
Beat the eggs together in a jug.
When cooked, remove the long asparagus stems and set aside.
Add the eggs and spoon in the parsley.
Make sure the egg covers the bottom of the pan.
Cook until the edges are slightly brown and flip over for another minute.
Remove from pan onto a plate.
Sprinkle some of the cooked ham on one side of the omelette and top with the asparagus.
Fold over the other half like a wrap.
Serve immediately.
