Spicy egg ham scramble

This recipe is the perfect way to use leftover ham from Christmas day
15ml olive oil
1 /2 small sweet onion, chopped finely
1 clove garlic, minced
10 eggs at room temperature
125ml milk
15ml vegetable oil
2 bunches spinach, washed and shredded
3 large tomatoes, seeded and chopped
1 yellow pepper, seeded and chopped
250g diced cooked ham
Salt and Pepper to taste
50g chopped parsley
125g sharp cheddar
Splash hot chilli sauce
Preheat large skillet over medium high heat and coat with olive oil.
In medium bowl whisk eggs and milk until well combined.
Add onion and garlic and sauté until translucent and soft.
Add beaten egg mixture to skillet and scramble until dry; set aside.
Preheat a small skillet over medium heat and add vegetable oil.
Add spinach, tomatoes, ham and pepper; sauté until softened.
Add vegetables to contents of large skillet and mix until well combined over low heat.
Stir in cheddar and season to taste.
Top with chopped parsley and a splash of chilli sauce.
