Avocado deviled eggs
Deviled eggs are so easy to make and guests love popping these tasty treats into the mouths.

2 slices bacon
½ tsp olive oil
5 large eggs
4 tbsp mayonnaise
1 ripe avocado peeled and pitted
1 tsp lemon juice
1/2 tsp mustard
Salt to taste
1 tsp parsley
1 spring onion, sliced

Boil the eggs in a pot of water for about 10 minutes.

While the eggs are boiling, cook your bacon slices. This should only take about 3 minutes on each side. Remove, cut into slices and set aside.

When the eggs are hard boiled, remove from the pot and run them under the cold tap. While the running is running over them, peel off the skin.

Cut the peeled eggs in half lengthwise and take out the yolk. Place the yolk in a separate bowl.

Mash the yolk with the mayonnaise before adding the avocado, lemon juice, mustard, salt and parsley.

Spoon the filling into the centre of the egg white.

Garnish with thin strips of bacon and the spring onion.
