Bacon and Cheddar cheese stuffed potatoes

Simple baked potato recipe which is great for family meals.
4 baking potatoes
4 rashers of streaky bacon
1 onion, thinly sliced
2 garlic cloves, minced
1 red pepper, diced
100g Cheddar cheese
2 tbsp olive oil
Salt and pepper
Preheat oven to 180°C/350°F/Gas 4.
Wash the potaoes and prick all over with a fork.
Place on a baking tray, rub with salt and olive oil, bake for 1½ hours until cooked through.
Remove from the oven and allow to cool before cutting down the middle for filling.
Heat 1 tbsp of olive oil in a frying pan and add the diced bacon, continue frying until crisp.
Add the onion, garlic, red pepper and seasoning.
Pile this mixture into the baked potatoes. Top with sliced spring onion and Cheddar cheese and bake for 20 minutes or until cheese is golden.
