Bacon and tomato soup
A twist on the traditional tomato soup.

1kg roma tomatoes, halved

2 tsp olive oil

1 tbsp brown sugar

1 onion, finely chopped

3 rashers bacon, chopped

2 garlic cloves

250ml chicken stock (gluten free)

Preheat the oven to 150°C/ gas mark 2

Line a tray with baking paper.

Place your tomatoes on the paper, cut side up.

Lightly brush with a teaspoon of olive oil and sprinkle with brown sugar.

Place it in the oven for an hour.

In a frying pan, heat the rest of the olive oil.

Add the bacon, garlic and onion.

Cook over a low heat for 10 minutes, stirring occasionally.

Add the cooked tomatoes and the chicken stock, season with salt and pepper.

Puree the ingredients together in a blender.

Serve with gluten-free toast.
