Vegetable potato bake

Vegetable potato bake
This will warm the whole family during the cold winter months.

2 courgettes, grated

1 head of broccoli, chopped finely

3-4 medium potatoes, grated

2 carrots, grated

2 celery stalks

130g strong cheddar cheese, grated

225g plain flour

6 eggs, lightly beaten

1 tsp dried thyme or rosemary

Salt and pepper to taste
Flat leaf parsley

Pre-heat oven to 180°C or gas mark 5. 

In a large bowl, combine the courgettes, broccoli, potatoes, carrots and celery. Mix well.

Lightly beat the eggs together in a cup. 

Pour the beaten eggs over the imgredients and combine.

Gently sieve in the flour and add in the cheese and herbs. Season with salt and pepper.

Ensure all ingredients are mixed together well.

Pour into lasagne dish and cook in the oven for 1- 1 1/4 hours.

Garnish with flat leaf parsley to serve.
