Baked eggs in a tomato sauce
This is a great recipe is so versatile that you can use up any veggies left in your fridge.
 

8 eggs

250g tomato sauce

100g mozzarella cheese, grated

1 red pepper, sliced

50g mushrooms, finely sliced

2 tsp rosemary, extra to garnish

Salt and pepper, to season

Preheat oven to 180°C or gas mark 5.

Whisk the eggs together in a bowl. Add in your rosemary and mushrooms and mix together.

Pour the tomato sauce into a lasagne dish or ovenproof dish. Place the peppers on top of the sauce.

Pour the egg mixture over your peppers and sauce. Season with salt and pepper.

Place in the oven for 15 minutes or until the eggs are cooked.

Served with a salad or on tomato bread.
