140g self-raising flour, sifted
250 whole milk
2 eggs, beaten
1 x 340g can of sweetcorn
1 tbsp fresh parsley, chopped roughly
2 tbsp olive oil
Seasoning
In a large mixing bowl, stir all ingredients to make a batter.
Heat the oil in large frying pan.
Drop one heaped tablespoon of fritter batter into the pan, flattening with a spatula.
Cook until golden on each side. Remove the fritters from the pan and drain on paper towels as you cook them.
Serve with sour cream, ketchup, anything you like!
