Banoffee pie
This banoffee pie is the ultimate in comfort food and couldn't be easier to make! 

Caramel toffee:

1 400g tin condensed milk

50g butter

50g brown sugar

1 tbsp golden syrup

Base:

150g digestive biscuits

100g melted butter

Topping:

2 bananas

1 tbsp lemon juice

170ml cream whipped

Crush biscuits in a food processor. Melt butter, add crushed biscuit. Transfer into tin and flatten out with the back of a wet spoon. 

To make caramel: Melt butter, syrup, sugar and condensed milk in a large saucepan over a medium heat, sirring continuously. Usea wooden spoon to clean sides of the saucepan. When the butter has melted and the mixture is bubbling, slowly but steadily, start timing 10-12 minutes as caramel can burn easily. Stir into the corners and all the around the bottom steadily. When the mixture has coloured a little and has slightly thickened, remove from the heat. 

Pour caramel over biscuit base and smooth the surface. Allow to cool fully. Whip cream until stiff and slice bananas mixing with the lemon juice. Place the bananas on top of the caramel and pipe cream on top. Decorate with a little grated chocolate.
