Bean and sausage casserole

Warming one-pot dish which is great for cooler nights.
50ml vegetable oil
8 sausages
1 carrot, cut into 2cm pieces
1 onion, thinly sliced
1l boiling water
1 vegetable stock cube
1 tbsp english mustard
1 bay leaf
4 tbsp parsley, chopped
400g tinned baked beans
Salt and pepper
Heat the vegetable oil in a saucepan.
Once hot, fry the sausages until golden brown all over.
Add the carrot and onion to the pan and cook for 4 minutes.
In a jug mix the boiling water with the vegetable stock cube and stir.
Add the stock, mustard, bay leaf and 2 tbsp chopped parsley and bring to the boil.
Turn down the heat and add the baked beans.
Cover the pan with a lid and simmer for about 1 hour.
Add some salt and pepper to taste.
Serve in bowls topped with a little chopped parsley.
