Beef and mushroom casserole

This traditional French dish is delicious.
1kg gravy beef, cut into chunks
750ml red wine
45g olive oil
2 rashers, diced
1 onion, diced
1 leek, sliced
2 carrots, peeled and sliced
2 celery stalks, sliced
6 eshallots peeled and halved
10 sprigs thyme
300g button mushrooms
Pour the red wine into a pan and bring to the boil. Allow to simmer for 5 minutes.
In a separate pot, heat the oil and cook the beef until well seared.
Add the bacon, leeks, carrots, onions and celery. Fry for 5 minutes. Add the wine and thyme.
Bring to the boil and allow it simmer for 50 minutes until the meat is tender.
Add the mushrooms and cook for a further 10 minutes.
