Beef roulade stuffed with vegetables
Thin strips of beef rolled with vegetables makes for a great dinner. 
 

4 slices beef steak, pounded

1 tsp mixed spices

Salt and pepper to season

1 yellow pepper, sliced

1 onion, minced

2 tbsp olive oil

200ml beef gravy

Preheat the oven to 180°C / 350° / Gas Mark 4. Line a baking tray with parchment paper.

Ensure your beef is pounded flat. Rub the mixed spices and salt and pepper over the beef

Put your pepper slices and onions at one end of the beef slices and roll tightly. You can use toothpicks to secure if you like. Sprinkle the oil over the beef. 

Place the beef rolls on the baking tray and place in the oven for 15 minutes until browned.

In the meantime you can make your gravy in a saucepan.

Remove the rolls from the oven and place on a clean plate. Pour the gravy over the rolls and serve with cabbage and mashed potatoes.
