Big batch tomato soup
Healthy, easy to make and store for another day.

2 onions, chopped

4 carrots, chopped

2 potatoes (large) washed, peeled and sliced

2 red peppers

2 x 400g chopped tomatoes

4 garlic cloves, crushed

4 tsp vegetable stock

4 tbsp olive oil

300ml water

2 tsp sugar

Fry the onions in the olive oil for a couple of minutes until they become soft and transparent.

Then add the carrots, potatoes and red peppers and cook for a further 10 minutes.

Add the remaining ingredients, bring to the boil and then simmer for 30-40 minutes or until the vegetables become soft.

Liquidise and serve or freeze in portions once completely cooled.
