Black bean dip with fresh salsa and tortilla chips

High in protein, beans give us energy and are building blocks for a growing child. This snack is fun, healthy and delicious.
200g tinned black beans, drained and rinsed
2 tbsp cheddar cheese, grated
1 ½ tsp fresh coriander, chopped
1 spring onion, chopped finely
Juice of ½ lime
2 tomatoes chopped well, seeds removed
10 tortilla chips per portion
In a bowl combine add the black beans and mash them slightly then set aside.
Scoop out into small food containers for lunch boxes and top with the cheese.
Make the salsa by combining the tomatoes, spring onion, lime juice and coriander into a bowl, season with salt and pepper.
Spoon into the food containers and serve with the tortilla chips in a bag to keep them crunchy.
