Blackened Cajun chicken

Blackened Cajun chicken
A really fun frisky chicken to serve to the family in a bun or with a salad or both.
 

1 tsp paprika

1 tsp salt

1 tsp cayenne pepper

1 tsp ground cumin

1 tsp dried thyme

¼ tsp ground white pepper

¼ tsp garlic powder

541g skinless, boneless chicken fillets

2 tbsp vegetable oil

Preheat the oven to 180°C / 350°F / Gas mark 4.

Line a baking tray with greaseproof paper and set aside.

Mix together all of the spices.

Rub one side of all the chicken with spice mixture.

Heat oil in a cast iron grill over high heat.

Place chicken in hot grill pan, seasoned side down, and cook for 1 minute.

Turn, and cook 1 minute on other side.

Repeating this process until all of the chicken has been used.

Place the chicken on the tray and bake for 5 to 10 minutes, or until no longer pink and juices run clear.
