Blueberry and avocado muffins
Delicious healthy muffins with the added goodness of avocado.

250g plain flour

2 tsp baking powder

½ tsp baking sowder

Pinch of salt

1 ripe avocado, de-stoned and peeled

90g brown sugar

1 egg

1 tsp vanilla extract

½ tsp cinnamon

225ml natural yoghurt

150g blueberries

Preheat oven to 180°C/350°F/Gas 4.

Line a 12 hole muffin tray with paper cases.

Sift flour, baking powder and baking soda into a bowl.

Add a pinch of salt, cinnamon and mix.

In a separate bowl beat together avocado, brown sugar, egg, vanilla extract and natural yoghurt.

Fold in blueberries.

Spoon the batter into the prepared cases and bake for about 25 minutes.

Remove from the oven, allow to cool and serve.
