Bread sauce

A traditional Christmas sauce to serve with your supper.
600ml milk
50g butter
1 onion, chopped
6 cloves
6 peppercorns
2 garlic cloves
1 bay leaf
3 thyme sprigs
3 slices pan, for breadcrumbs
4 tbsp single cream or mascarpone
Pinch nutmeg, freshly grated
In a large pan, simmer the milk, butter, onion, cloves, peppercorns, garlic and herbs for 20 minutes.
Strain and return the liquid to the pan. In a food processor, blitz the bread then add to the pan and simmer for 3-4 minutes.
Stir in the cream or mascarpone.
Add nutmeg, season with salt and pepper then serve.
