Carrot fries
Delicious and low in fat, try these alternative fries.
 

600g baby carrots, ends removed

1 tbsp cornflour

1 tbsp vegetable oil

1 tsp finely chopped tarragon or thyme (dried is fine)

Black pepper

Preheat the oven to 200°C / 400°F / Gas mark 6.

Line a baking tray with greaseproof paper and set aside.

Cut carrots into thin fries, about 1cm thick, and mix with the cornflour and a little black pepper until coated.

Toss with vegetable oil, spread in a single layer on the baking tray and bake for 40-45 minutes, turning halfway.

Mix a little salt with tarragon or thyme and toss through the cooked fries just prior to serving.
