Cheats chicken casserole
This quick and easy chicken casserole requires virtually no effort and is really tasty!
2 tbsp olive oil
1kg chicken breast, cut into large chunks
2 x 400g tins of cream of chicken soup
200ml chicken stock
500g frozen vegetables
1 tbsp thyme
2 tbsp parsley
Preheat oven to 200°C
Heat olive oil in a large frying pan, fry the chicken until slightly. Add the soup, stock and thyme and mix. Add the frozen vegetables and bring to the boil. Pour into a casserole dish and transfer to the oven for 45 minutes. Serve with creamy mashed potato and garnish with parsley.
