Chicken and cannellini beans

Hearty, healthy and super comforting on cold days this dish is an easy mid-week meal for everyone in the family.
2 tbsp olive oil
50g bacon lardons or 4 rashers, chopped
1 pepper finely sliced
1 onion large dice
2 garlic cloves, crushed
400g chicken fillets
2 courgettes
1 tbsp smoked paprika
2 tbsp fresh rosemary, finely chopped
690g Tomato passata
400g tin cannellini beans, drained and rinsed
100g peas
Use a large non-stick frying pan to heat the oil.
Add the bacon onion, pepper and chicken and stir-fry for 5 minutes until chicken is lightly browned and the bacon crisp.
Add the courgettes, paprika, garlic and rosemary then stir fry for 1-2 minutes.
Pour in the passata and beans and peas and simmer, stirring occasionally, for 5-8 minutes or until the chicken is tender and the sauce has thickened.
Season with salt and pepper and serve with a green salad on the side if you like.
