Chicken broccoli casserole
An easy casserole to make that is satisfying and looks lovely as part of a buffet.
 

600ml chicken stock

812g boneless chicken, chopped into bite sized pieces

Head of broccoli, cut into small florets

400g carrots, chopped

1 tbsp mixed herbs, dry or fresh such as basil and thyme

2 tbsp corn flour

300ml milk

1kg mashed potato

2 onion, chopped

200g cheese, grated

Preheat the oven to 200°C / 400°F / Gas mark 6.

Pour the stock into a large pot and bring to the boil.

Add the chicken, cover and simmer for 25-30 minutes.

Add the broccoli in with the chicken 10 minutes before the cooking time is finished.

Remove the chicken and broccoli with a slotted spoon and transfer to an oven-proof dish.

Reserve the chicken stock.

Add the carrots, herbs and season to taste with some salt and pepper to the stock.

Mix the corn flour with a little milk to form a paste, then pour in the rest of the milk adding this to the stock.

Pour the stock and the seasoned carrot mixture over the chicken and vegetables into the oven proof dish.

In a large bowl, mix the mashed potatoes with the onion and half of the cheese.

Spoon the mash mixture over the chicken and vegetables.

Top with the remaining cheese.

Bake for 30 minutes and serve with salads if you like.
