Chicken with mushrooms casserole
A healthy and low calorie chicken casserole easy to prepare and ready in a flash.
 

2 tbsp olive oil

500g boneless, skinless chicken thighs

Flour, for dusting

8 new potatoes, sliced in half or if small keep a couple whole, cooked in water until a fork goes in with resistence

50g pancetta or bacon lardons

300g small button mushrooms

2 large shallots, chopped

250ml chicken stock

1 tbsp white wine vinegar

50g frozen peas

Small handful parsley, finely chopped

Heat 1 tablespoon of oil in a frying pan.

Season and dust the chicken with flour then brown on all sides. Remove.

Cook the pancetta or lardons and mushrooms and prepared potatoes until crisp and tender then remove.

Add the final tablespoon of oil and cook shallots for 5 minutes.

Add the stock and vinegar, and allow to bubble for 2 minutes.

Return the chicken, pancetta/bacon, mushrooms and potatoes and cook for 15 minutes.

Add the peas and parsley and cook for 2 minutes more, then serve in one large dish.
