Chinese dan dan style noodles

This spicy Asian broth is the base for a lovely noodle and pork dish, ideal anytime.
2 tbsp sesame oil
800g pork or turkey mince
1 bunch spring onions, sliced and divided
2 garlic cloves, finely chopped
1 tbsp fresh ginger, grated
945ml chicken stock
250g Pak choi
500g Chinese noodles
3 tbsp reduced-sodium soy sauce
1 tbsp rice vinegar
Heat 1 tablespoon of the sesame oil in a large saucepan over medium heat.
Add the mince and all but 2 tablespoons of the spring onions, garlic and ginger and cook, stirring to breaking up the mince until no longer pink, about 5 minutes. Transfer to a plate.
Add the stock, Pak choi, noodles, soy sauce, vinegar and the remaining oil to the pan.
Bring to a boil over medium-high.
Cook, stirring occasionally, until the noodles are tender, 3 to 5 minutes.
Return the mince mixture to the pan and stir to combine.
Serve garnished with the reserved spring onions and the cucumber.
