Chocolate granola bar
The chocolate on these granola bars are a much needed treat.

450g porridge oats
50ml olive oil
75g butter, plus extra for greasing
Pinch salt
150g sugar
2 tbsp honey
1 tsp vanilla extract
110g flour
100g pecan nuts
70g almonds, finely chopped
150g cooking chocolate, melted

Handful peanuts for garnishing

Preheat the oven to 180°C / 350°F/ Gas Mark 5. Line a baking tray with parchment paper.

Combine the oats with the oil and butter in a large bowl. Add the salt. Set aside.

In a small pan, combine the sugar and honey together over a medium heat. Add the vanilla extract before removing from the heat. Allow to cool slightly.

In the meantime, spoon the flour, pecan and almonds into the oats.

Give it a good mix before pouring in the sugar and honey mix. Mix again.

Spoon the mixture onto the baking tray – you should get about 12/15 bars out of it.

Place in the oven for about 30 minutes.

While the bars are baking, melt the chocolate in the microwave on 30 second blasts.

Sprinkle the melted chocolate over the bars and top with the nuts.

Allow the chocolate to set before serving.
