Christmas bread and butter pudding

A classic with a nice Christmas twist.
10 slices Irish Pride White Sandwich
75g unsalted butter
20g sultanas
20g dates
20g dried apricots
1 cup of black tea
200ml milk
100ml cream
1 vanilla pod
2 cinnamon sticks
50g sugar
3 eggs
50g pecans, chopped
Put the dried fruits into a small cup and pour over the tea to cover. Leave to soak overnight.
Put the milk into a small pan with the vanilla pod and the cinnamon sticks. Bring to a simmer, then turn off the heat and allow to cool.
Meanwhile, generously butter the bread slices as well as the baking dish. Arrange half the slices in overlapping rows inside.
Beat the eggs with the sugar until well mixed.
Remove the vanilla pod and the cinnamon sticks from the milk. Beat the milk and cream into the egg mixture.
Pour about half of the custard over the bread. Drain the soaked fruit, cut the apricots and dates into small bits and sprinkle over the custard. Let the bread soak in the custard for about 20 minutes.
Preheat the oven to 180°C/350°F/Gas 5. Arrange the rest of the bread in a second layer and top with the rest of the custard. Scatter the pecans. Put in the oven and cook for 35 minutes, until golden brown.
