Christmas cacciatore
This tasty Italian spin off makes a yummy family meal.
 

2 small or 1 large onion, chopped

2 garlic cloves, crushed

3 tbsp olive oil

2 tsp dried oregano

3 x cans chopped tomatoes

1 tbsp sugar

Little splash vinegar

500g leftover turkey, shredded into chunks

1 x 125g balls, fresh mozzarella in water

2 good handfuls fresh breadcrumbs

Preheat the oven to 220°C / 425°F / Gas mark 7.

Grease a baking dish with a little butter.

In a pan fry the onion and garlic in the oil until soft.

Add the tomatoes, sugar a little vinegar and some salt and pepper.

Simmer for 20 minutes until quite thick.

Stir in the turkey and transfer to the prepared baking dish.

Tear the mozzarella over in chunks, then scatter over the breadcrumbs with a bit more ground pepper.

Bake for 20 minutes until turkey is piping hot and the top is golden and bubbling.
