Coconut and white chocolate with banana s’more bars

These s’mores, are delightful and packed with ingredients that go beautifully together.
115g grated coconut
1 tsp vanilla extract
1/8 tsp salt
2 egg whites
60g granulated sugar
60g white chocolate chips or chopped
2 large bananas
110g semisweet chocolate, chips
100g mini marshmallows
Preheat the oven to 180°C / 350°F / Gas mark 4.
Line a baking tray with greaseproof paper and set aside.
In a medium bowl, combine the coconut, vanilla, salt and egg whites.
Stir in the white chocolate and sugar.
Press into the baking tray.
Wrap the bananas in foil and bake in the oven along with the coconut base on separate shelves for 25-30 minutes.
The coconut base will be golden brown and the bananas dark and starting to seep a bit.
Immediately peel the bananas into a bowl and mash roughly with a fork.
Spread the mashed banana over the coconut base and sprinkle on the chocolate.
Spread the chocolate evenly to cover and sprinkle with marshmallows.
Place under the grill until the marshmallows have changed colour but not burned and have melted well.
Allow to cool before cutting into bars.
