Coconut quinoa and kale

180g quinoa, rinsed
1 small onion, finely diced
1 small red chilli
½ tsp of cumin
1 tin of coconut milk
Salt and pepper
Kale, washed and finely chopped
Fresh coriander, finely chopped (2 tbsps worth)
Lemon slices
Pine nuts or almond (optional)
Pour the coconut milk into a saucepan with the chilli, cumin and onion and bring to a boil.
Add the quinoa and allow to boil for about 5mins minutes, stirring occasionally.
Bring it down to a simmer and cover the pot with its lid. Let the quinoa simmer until it has absorbed all the liquid. This should take 30mins.
Once the quinoa is fully cooked, fluff it with a fork and add the kale. Stir until the kale has wilted. Salt and pepper to taste and mix in the nuts if desired.
Serve topped with the coriander and lemon.
