Cod and pea bites
Excellent finger food the kids can get into perfect for a supper, or a party.
 

4 large potatoes, peeled and cut into chunks

350g cod or haddock fillet

100g frozen peas

2 tbsp flour

1 large egg, beaten

100g fresh white breadcrumbs

Oil for shallow frying

Herb-flavoured mayonnaise and lemon wedges to serve

Cook the potatoes in a large pan of boiling, lightly salted water until tender.

Drain and mash.

Meanwhile, cook the fish in a pan of water for 10-12 minutes until just cooked.

Remove the fish with a slotted spoon and flake it using a fork, discarding any skin and bones into a large bowl.

Pour boiling water over the frozen peas then drain.

Mix the mashed potato, fish and peas together then and season with a little salt and pepper.

Shape into around 16 small balls.

Roll each ball in a little flour, then egg and lastly the breadcrumbs until coated completely.

Pop them all on a plate, cover and chill in the fridge for 30 minutes.

Shallow-fry the fish bites in batches in hot oil for 3-4 mins until crisp and golden brown.

Remove with a slotted spoon and drain on kitchen paper.

Serve with the herb-flavoured mayonnaise and lemon wedges.
