Sweet Fish & Fruit Curry
A creamy super quick fish curry with just the right amount of sweetness and spice to tickle little taste buds without overwhelming them. This curry is protein-rich and packed with fruity SuperFood goodness of the apple, pear and banana. These fruits are antioxidant and high in fibre, keeping little bowels healthy by preventing constipation.
 

1 sweet apple - peeled, cored, cubed 1 ripe pear - peeled, cored, cubed 1 banana - peeled, sliced 2 tbsp plain unsweetened yogurt 150ml (5fl oz) of whole milk

1⁄4 tsp minced ginger 1⁄4 tsp minced garlic 1⁄4 tsp ground cumin 1⁄4 tsp ground coriander Pinch of ground black pepper Pinch of ground turmeric

1 x 100g (31⁄2oz) white fish fillet (skinless, boneless) - cut into 1” chunks

Place the fruit, yogurt, milk, ginger, garlic and spices (cumin, coriander, black pepper and turmeric), into a blender and blend until smooth. Pour the fruity mixture into a pot, bring to the boil and simmer (uncovered) on low heat for 5mins to ensure all the spices are cooked through, stirring occasionally.

Add the fish chunks to the sauce and continue to simmer for a further 5-6mins, until the fish is flaky and breaks apart easily. Serve with plain overcooked rice.
