Crispy fish burger with lime mayo

Crispy fish burger with lime mayo
Light crisp fish burger with delicious coriander mayo and rustic buns.
 

400g white fish fillets, such as cod, haddock or pollack

4 tbsp plain flour

1 egg, beaten

8 tbsp dried breadcrumbs (we used corn flakes)

2 tbsp sesame seeds (optional)

Vegetable oil, for frying

1 ripe avocado

Juice 1 lime

Handful coriander, chopped

2-3 tbsp mayonnaise

Wholemeal burger buns sliced and toasted if you like

Cut the fish into chunky pieces.

Put the flour in a bowl with some salt and pepper.

The egg in another bowl, and the breadcrumbs and sesame seeds (if using) in a third.

Drag the fish fingers through the flour, then the egg and, finally, coat in breadcrumbs.

Chill for 10 minutes.

Heat a drizzle of oil in a frying pan and cook the fish for 3-4 minutes each side until golden and cooked through, adding a drizzle more oil if needed.

Stone, peel and slice the avocado, squeeze over a little lime juice then mix the remaining lime juice and coriander into the mayonnaise.

To serve, spread a little mayonnaise over each bun, top with some of the crisp fish, a few slices of avocado and the bun top.

Serve the remaining mayonnaise on the side.
